Pork, ground

Dates chopped and soaked 24+ hours in sherry.
¼ tsp
Juniper Berry ground, or 1T of gin, preferably Bombay)
¼ tsp
Cardamon
½ tsp
Coriander
⅛ tsp
Cumin
⅛ tsp
cayenne
2 tbsp
Garlic crushed
2 tbsp
Cilantro chopped
1 oz
Lime juice
2 tsp
Lime zest
1 tbsp
Tamari
1 tsp
Tandoori Mix
1 ½ tbsp
Corn Starch - if mixture is too wet to mold
Prep Time: 15 minutes
Cook Time: 5 minutes

Serving Size: 3 oz
Directions
Drain dates and discard sherry into a glass and down your throat.
Mix all ingredients well in a bowl and store overnight in fridge covered with paper towel covering bowl, but not touching meat. (optional)
Final : add and mix in cornstarch, and shape into slider patties..
Grill or sautée and serve on slider buns.
Do NOT press patties while cooking.
No condiments needed !
Substitute for tandoori spice :
double the coriander and cumin and add a pinch of nutmeg, clove and 1/8 t ground or fresh ginger.
